I cannot speak for the quality of protein in the resulting meal, but do enjoy a breakfast of two lightly toasted slices of TJ Organic Super Bread, each with an ounce of neufchatel spread to the edges, half tbsp of capers scattered atop, an ounce of Vita smoked salmon layered on and sprinkled with a pinch of dill weed. I' am curious about the protein quality, though.

The protein quality of your meal appears to be satisfactory, mainly due to the presence of salmon which compensates for the lysine deficiency in bread (careful with the salt content, though). To get the most accurate results, it is recommended to combine these two food items in a 2:1 weight ratio, and you can confirm this by using this helpful tool: Protein Quality and Protein Combining: Visual tools for the PDCAAS method. It is worth noting that the other ingredients in your meal are unlikely to have a significant impact on its protein quality. However, please bear in mind that protein quality is best evaluated on a gram-level basis as it is more precise. Additionally, it is not a big issue if the protein quality of one meal is not 100s our bodies work over longer cycles than meal-to-meal. You can still provide the necessary amino acids during the day as long as your diet is varied and has enough protein. Best regards, Jan
